Springwater Bistro wins magazine award for being a wine whiz

The
Springwater Bistro at 139 Union Ave. was a winner in Santé magazine's 2003
Restaurant Awards for cooking with wine.
Founded
in 1996, the 150,000 circulation magazine is a premier business publication
for fine dining restaurant professionals. The bistro is one of 46 venues to
be honored on Sept. 27 with a five-day celebration in Sonoma, Calif.
Cooking with wine is 'essentially cooking with history,' said David Britton,
the Springwater Bistro's co-owner and cook. 'We incorporate spirits and
wines in our cuisines.'
Britton said the menu at the restaurant changes every day.
'We won this award with a great deal of effort,' he said. 'We are pleased
with the foods, with our labor and the wines.'
